    that steak is looking so good, i'm just a home cook and do a similar thing but have not tried the added butter. i have to use a timer and thermometer to get just right at med. rare. i do it outside too with a george forman that gets really hot and cooks fast. i don't like doing it indoors because i don't like stinking up the house and the grease getting in the air and all over. thnx for the info.

    Accept, that is the way I have been cutting it for years now. Only difference is I cut the breast into 2 or 3 sections along the grain first then i cut the sections against the grain. This makes shorter chunkier pieces.

    If I dont have an internal temo thermometer can I just throw it in for about 15-20 mins and turn it every 2-4 mins?!!

    For the best grill marks, lay the steak down 10 and 2 o’clock, always placing the steak onto a virgin surface of the grill every time you move it. 4-5 minutes total on each side. For thicker cuts or well done, finish slowly on indirect heat at a grill temp no higher than 250F. I like to use a digital probing thermometer for especially thick cuts (more than an inch thick), but that’s just me.

    Your grates are upside down. Flat side should be up and pointed side down. (As per Webber) Makes it easier to clean too.

    5 years later and still ridiculously helpful. For any nervous cooks, like me, you can just go by the visual colors in the absence of cook times though I noticed I rendered the thin fat side in about 2-2.5min on med/high heat. Steak cooks quickly, but don’t worry. Just stay on top of it and don’t get distracted and it’ll turn out great. Google your preferred temp (rare, med. rare, well) to find your internal temperature. I like rare so my internal temp is 120-125. Good luck 👍
